Slow Cooker Chicken Cordon Bleu

I actually let it cook during Sunday School and church in the fellowship hall. It was super easy. Everyone at dinner really liked it. Carl even asked me if I could cook it for the two of us one day during the week. That told me Carl REALLY liked it. I made it this week. I let it cook in the crock pot one evening and we reheated it for our lunch the next day. So if you need/want a new chicken recipe, here you go. Enjoy! It is really delicious.

Parmesan Crusted Chicken Recipe

Here is the recipe for the photo I posted in my Project 365 - Week 4 post. Parmesan Crusted Chicken 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise 1/4 cup grated Parmesan cheese 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.) (I used about 8 chicken breast tenders.) 4 tsp. Italian seasoned dry bread crumbs (I didn't have bread crumbs, so I used crushed Ritz crackers.) Preheat oven to 425°. Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs. Bake 20 minutes or until chicken is thoroughly cooked. This was really good. I cooked mine for about 25 minutes because the chicken wasn't completely thawed. It was really tender and juicy. Carl loved it.

Ultimate Chocolate Chip Cookies

Along with the Oroe Truffles, I made some chocolate chip cookies. These are the chocolate chip cookies I have made in a while. They truly are ULTIMATE. If sauce is too thick, add a little milk. Serve over pasta. We tried this a couple of weeks ago and really liked it. It is super easy, and tastes really good!

Pumpkin Muffins

I made these 2 ingredient Pumpkin Muffins this weekend. They are super easy and super delicious. Even Carl kinda liked them and he doesn't like pumpkin. Source: sweet-verbena.blogspot.com via Vanessa on Pinterest 1 box yellow or spice cake mix (I used a spice cake mix) 1 15 oz can of pumpkin Beat together cake mix and pumpkin with mixer. Fill muffin liners 3/4 full. Bake at 350 degrees for 20 to 25 minutes. Enjoy!

Easy Pot Roast Recipe

This is actually cooking right now. It smells sooo good, making me very hungry for lunch tomorrow. This is from the Gooseberry Patch "Super Fast Slow Cooking" book. So Easy Slow Cooker Pot Roast 3 to 4 pound chuck roast 1 (10-3/4 oz) can tomato soup 1 (10-3/4 oz) can cream of mushroom soup 2 (16 oz) cans whole potatoes, drained 2 (14-1/2 oz) cans sliced carrots, drained (I use whole baby carrots) Mix together all ingredients in a slow cooker. Cover and cook on low setting for 7 to 8 hours. So easy and tastes so good, even warmed over the next day. I usually cook it one afternoon/evening, and we have it for lunch the next day.

Easy Snack Recipe

Here is an easy snack recipe. I fixed it for our Pastor Appreciation Night, and came home with an empty bowl. It is so simple to put together. It would be a good snack for after church on Sunday nights. It is from the latest issue of Taste of Home. I like it because it is both sweet and salty....best of both worlds there. :) Sweet-Tooth Popcorn 1 package (3.3 oz) butter flavored microwave popcorn 1 pound white candy coating, chopped 1 cup peanut M&M's 1 cup Reese's Pieces 1 cup salted cashews 1 cup pecan halves Microwave popcorn according to package directions. Place in large bowl. In microwave, melt candy coating, stir until smooth. pour over popcorn and stir until covered. Combine the M&M's, Reese's Pieces, cashews, and pecans (I put all these into a large Ziploc bag and shook it up to combine); stir into popcorn mixture. Immediately spread onto wax paper; let stand until set. Break into pieces. Store in an airtight container.

Here is an easy recipe for the Crock Pot. It is from my Gooseberry Patch Slow Cooking Cookbook. All the recipes in the book have 5 ingredients or less. I got the cookbook from my Mom as a wedding gift. Super Simple Chicken Dinner 4 boneless, skinless chicken breasts 26-oz jar of spaghetti sauce 1/2 cup water 1/2 teaspoon salt cooked egg noodles or spaghetti Place chicken in a slow cooker; add sauce, water and salt. Cover and cook on high setting for 4 hours. Spoon shredded chicken and sauce over cooked noodles. Serves 4. You could use any kind of pasta sauce. We always use the traditional because we have a somewhat picky eater in our house...hahaha. I am actually cooking this right now for us to eat tomorrow at lunch. Use one of these and you will have almost no mess to clean up. I love them!

Super Easy Cookies

I found this cookie idea as I was going through random blogs. It is so super easy. All you need for this are the following: 1. Ready to Bake cookies 2. Any flavor cake frosting Bake the cookies as you normally would. After they have cooled, spread frosting on underside of one cookie and place another cookie on top of the frosting to make a sandwich cookie. I made these Saturday night and took them to Grandma's on Sunday. I went home with an empty plate. They were very, very good!

A good soup recipe

Since it is getting colder now, I decided to fix a new soup recipe. This recipe is from the Taste of Home Simple and Delicious magazine, the September/October 2009 issue. It is really good, and really easy to fix. Carl said that this may be a new favorite. Chicken Cheese Soup 4 cups cubed cooked chicken breast 3 and 1/2 cups water 2 cans (10-3/4 oz each) condensed cream of chicken soup, undiluted 1 pkg. (16 oz) frozen mixed vegetables 1 can (14-1/2 oz) diced potatoes, drained 1 pkg. (16 oz) process cheese (Velveeta), cubed In a Dutch oven, combine the first 5 ingredients. Bring to a boil. Reduce heat, cover and simmer for 8 to 10 minutes or until vegetables are tender. Stir in cheese just until melted (do not boil). Yield: 7 servings
